Keto Almond Pudding

This almond pudding is sooooo good!!! πŸ˜‹ Easy to make, then enjoy as-is or garnish to choice and drizzle with sugar-free syrup.

Ingredients

1 cup unsweetened almond milk
2 Tbsp all-natural almond butter
1 Tbsp golden monkfruit sweetener
1/2 pkg powdered gelatin
Optional, for garnish: seed cereal or granola, cocoa nibs and sugar-free maple syrup

Directions

In a small sauce pan, heat the almond milk over medium-high heat.

Stir in the almond butter and monkfruit sweetener, then bring to a low simmer, stirring frequently.

Remove from heat, then whisk in the gelatin powder until well combined.

Pour out the mixture, dividing it between 4 small bowls or ramekins. Cover each with a cling-wrap, and refrigerate at least 4 hours.

Unmold the almond pudding, removing the cling-wrap and flipping it onto a small plate.

Serve as-is or add garnishes of choice. The almond pudding is amazing with some seed cereal, cocoa nibs and keto maple syrup. 🍁
