Keto Spiced Rum and Starfruit Muffins

If I had you at spiced rum, it’s no wonder!

These spice rum and starfruit muffins are a tasty treat that won’t throw off your macros! These tropical boozy bites are grain-free, sugar-free and keto.

Ingredients

2 starfruits
3/4 cup almond flour
1/2 cup unsweetened almond milk
1/4 cup coconut flour
1/4 cup butter
1/4 cup Swerve brow, divided
1 large egg
2 Tbsp white rum
2 tsp baking powder
1 tsp vanilla extract
1 tsp ground cinnamon
1/8 tsp ground allspice

Directions

Preheat oven to 350F.

Prepare the starfruit by chopping one and slicing the other into star shapes.

In a small sauce pan, melt the butter over medium-high heat.

Add the chopped starfruit and 2 Tbsp of Swerve brown, and cook down about 3-5 min, stirring frequently.

Add the rum and reduce another 2 min, stirring constantly.

Remove from heat and set aside to cool slightly.

In a large bowl, combine the almond and coconut flours with the Swerve brown, baking powder, cinnamon and allspice.

In a medium bowl, combine the almond milk, egg and vanilla extract, then mix in the starfuit reduction.

Add the wet ingredients into the large bowl of dry ingredients, mixing until well combined.

Divide the muffin batter between 12 muffin molds. You can use silicone molds, muffin liners or grease the mold.

Top each muffin with a slice of starfruit.

Bake 30-35 min.

Remove from the oven and allow them to cool at room temperature at least 30 min.

Store in the fridge or freeze to enjoy at a later date.
