Korean Cucumber Salad (Keto)

This side is so easy to make and so delicious, you’ll be making it again and again!

Serve this Korean cucumber salad with grilled meats, add it to a bibimbap and more.

Ingredients

1 English cucumber, diced
1 Tbsp Korean red pepper powder (Gochugaru)
1 tsp rice vinegar
1 tsp sesame oil
1 tsp stevia
Pinch of kosher salt

Directions

In a large bowl, toss together the cucumber together with the kosher salt. Set aside.

In a small bowl, whisk together the Korean red pepper powder rice vinegar, sesame oil and stevia.

Return to the bowl with the cucumber, and pour out as much water as possible.

Add the Korean red pepper mixture and toss together.

Cover the cucumber salad and refrigerate 30 min.

Serve with grilled meat, Korean salmon (see our Korean salmon recipe), bibimbap, or other main of choice.
