Spicy Korean-Inspired Salmon Tartare

With summertime still in full swing, easy refreshing meals are a definite win. This spicy Korean-inspired salmon tartare fits the bill and is sure to please!

Serve it up as a meal paired with crunchy keto crackers or lay it atop crisp cucumber slices for an hors d’oeuvre that promises to be a hit on any table.

Ingredients

4 oz salmon filet, sushi-grade
1 Tbsp fresh ginger, minced
2 tsp Korean chili powder (gochugaru)
2 tsp monkfruit
2 tsp rice vinegar
2 tsp soy sauce
2 tsp sriracha
1 tsp sesame oil
1 medium cucumber
1 garlic clove, minced
1 scallion, minced
Pinch of salt
Optional, for garnish: black sesame seeds, Korean chili powder

Directions

Prepare the cucumber:

First, thoroughly wash the cucumber.

If preparing for individual servings of tartare:
Finely dice the cucumber. In a bowl, toss it with the sesame oil and a pinch of salt. Mix well and then set aside.

If preparing hors d’oeuvres:
Cut the cucumber into even slices and set aside.

Prepare the salmon tartare:

Start by finely dicing the sushi-grade salmon.

In a medium-sized bowl, combine the diced salmon with the remaining ingredients, mixing well.

For individual serving:
On a plate, position a round cookie cutter or a similar mold. Add half of the prepared diced cucumber. Press it down gently, then top with half of the salmon tartare. Again, press down gently to compact the mixture and create an even top surface. With care, lift the cookie cutter or mold off the plate to reveal a neatly shaped tartare.

For hors d’oeuvres:
On each cucumber slice, place a generous spoonful of the salmon tartare. Arrange these tartare-topped cucumber slices neatly on a serving tray or plate.

Serving:

Optionally, sprinkle the salmon tartares with black sesame seeds and/or some Korean chili powder.

Serve immediately for maximum freshness, optionally with some keto crackers.
